Ingredients (Serves 3-4)

  • 1 liter full-fat milk (for creaminess)

  • 2 ripe custard apples (sharifa/sitaphal) (pulp extracted & seeds removed)

  • 4 tbsp sugar (adjust as per taste)

  • ½ tsp cardamom powder (for aroma)

  • 8-10 almonds (chopped or slivered)

  • 8-10 pistachios (chopped, optional for garnish)

  • A few saffron strands (optional, for flavor & color)


Instructions

Step 1: Reduce the Milk

  1. In a heavy-bottomed pan, bring 1 liter of milk to a boil.

  2. Lower the flame and simmer while stirring continuously.

  3. Scrape the sides and mix the malai (cream) back into the milk.

  4. Reduce the milk to half its original quantity, making it thick and creamy.


Step 2: Add Flavoring & Sweetener

  1. Add sugar, cardamom powder, and saffron strands (if using).

  2. Stir well and simmer for 2-3 minutes until the sugar dissolves.


Step 3: Add Custard Apple Pulp

  1. Turn off the heat and let the rabdi cool slightly. (Do not add the fruit while it's hot, or it may curdle.)

  2. Once warm, mix in the custard apple pulp gently.

  3. Refrigerate for 1-2 hours to enhance the flavor.


Step 4: Serve & Enjoy
