Rava Kesari Recipe (Traditional South Indian Sweet Dessert)

Ingredients (Serves 3-4)

  • ½ cup rava (sooji/semolina)

  • ¾ cup sugar (adjust as per taste)

  • 1½ cups water (for a soft texture, can replace with milk for richness)

  • ¼ cup ghee (clarified butter) (adds richness and aroma)

  • 2 tbsp cashews (broken into pieces)

  • 1 tbsp raisins (optional, for extra sweetness)

  • ½ tsp cardamom powder (for aroma)

  • A few saffron strands (soaked in warm water/milk, optional for color & flavor)

  • A pinch of orange or yellow food color (optional, for traditional look)


Instructions

Step 1: Roast the Rava

  1. Heat 1 tbsp ghee in a pan and roast cashews & raisins until golden brown. Remove and set aside.

  2. In the same pan, add the rava (semolina) and roast on low flame until light golden and aromatic. (Do not burn it!)

  3. Remove the roasted rava and keep aside.


Step 2: Prepare the Sugar Syrup

  1. In the same pan, boil 1½ cups water.

  2. Add saffron strands & food color (if using) and let it simmer for a minute.


Step 3: Cook the Rava Kesari

  1. Slowly add the roasted rava to the boiling water while stirring continuously to prevent lumps.

  2. Cook on low-medium heat, stirring until the rava absorbs all the water.

  3. Add sugar and mix well. The mixture will loosen slightly but will thicken again.

  4. Add ghee gradually, stirring continuously for a glossy texture.

  5. Add cardamom powder, roasted cashews, and raisins.

  6. Mix well and cook for another 2-3 minutes until the kesari leaves the sides of the pan.


Step 4: Serve & Enjoy
